WINTER MELON SOUP

Ingredients (Serves 4)

  • Winter melon, 200g
  • Ham, 4 slices
  • Egg white, 1 egg
  • Chicken broth, 4 cups
  • Sake, 1 tablespoon
  • Salt and pepper to taste
  • Coriander as garnish
  • Potato starch, 1 tablespoon
  • Water, 1 tablespoon

Instructions

  1. Peel and slice winter melon, cut ham into diamond shapes.
  2. Heat chicken broth in Thermos® Shuttle Chef® inner pot to boil. Add winter melon, ham slices and seasoning as desired, heat for 2 minutes.
  3. Place Shuttle Chef® inner pot into outer pot, over lids and let soup simmer for 10 minutes.
  4. Remove inner pot; put on stove and bring it to boil again. Add potato starch mixed with water, and finally egg white.
  5. Pour into bowl and serve with coriander.
